Today was my last day with my horrible second graders. I'm pretty sure I got cussed out in Spanish today. To celebrate I skipped my support group meeting and made dinner!

Phyllo pizza with goat cheese, prosciutto, caramelized onions,roasted holland peppers, yellow tomatoes, fresh herbs, and olive oil. Paired with some wine and a salad. Then followed by ice cream with fresh pineapple and black berries.



I made seared tuna with a panko coconut crust and spicy soba noodles last night. I didn't take a picture. We ate it all, too.

I swam this morning. 3300 yards. My goal is 9000 a week. One more swim on Sunday and I will have that easy!

I like to cook on Sundays. I make a nice dinner and stuff for lunches and dinners all week. I made a batch of egg salad for sandwiches. We're roasting a chicken a for dinner, the left overs can be used in enchiladas later this week.

I picked up a couple cook books from the library. I've been trying out recipies so I can photocopy the good ones before the books are due. Today I made Apricot Almond Bread from a the original Moosewood Cookbook. It's out of print and really old. Chris gets to have the bread for breakfast. It's actually healthy, I used a small amount of butter.



In an attempt to use up some of the beets from the garden I found a recipe for Beet Brownies with
Jam. They turned out pretty good. I usually like my brownies fudgey. I can make really good brownies (it's one of the few things I can do really well). The recipe called for 3/4 cup of black raspberry jam. I had one jar of strawberry jam left from our strawberry picking last year. Since I need to make room in the pantry for the jam I'm going to make this year, I figured it'd be a good way to use the beets and the jam. The brownies are cakey and actually really good. They aren't my favorite brownies, but they are good.




Just incase you were wondering how many dishes I used while baking this afternoon, here is a picture. I even cleaned it up myself :)





As for workouts, I had a really good swim. I swam 3500 yards. I wanted to do more, but the coach was late and we had to pull tarps. I will be so happy when it gets warm enough to not have to pull tarps in the morning before practice. Afterwards I came home to baked French toast courtesy of my loving husband. Now if he could just stack the tupperware, he'd be perfect :)

I ran my favorite hill run near my house. Which involves the length of Rain Creek. I ran it the opposite direction of Motive. I felt a little sluggish but overall it was a good run. It's not really raining out. It's an icky drizzlinh humid day. It's not 105, though, and for that I am greatfull.

I made another batch of jam this morning. It has to sit overnight before I can it.

Now I'm going to clean house. it's been weeks, and we're having Kate over for dinner tomorrow. I don't want her to think we like ahving cat hair on everything.

My jam turned out great. I made a small batch, because it my first time. I'm going to make a another batch tomorrow.

I didn't swim this morning. I was exhausted and it seemed like a bad idea this morning.
I did spend the morning with Chris. Around 2pm when I woke-up from a nap I decided I needed to do a workout.

I ran to the gym 1.2 miles, ran 3 0.66 mile loops around the Quarry lake. Then did my gym routine (minus the rowing). Then ran home. I felt better after doing my workout. I've been feeling really crappy the past few days. My left shoulder has been bothering me (hence the skipping swimming on Saturday and no rowing today).

I then had to meet the other coaches to figure out what we were gonna say about each swimmer at the awards ceremony on Thursday. We met at Austin Java. I forgot how good their veggie burgers are. The bun was really good.

I'm gonna do my "long run" of 7 miles tomorrow morning. Then hopefully clean house before I have to coach.

I tried. I thought I had hit my goal, but I must have messeged up my watch somewhere. I wanted 24:02. I don't think I gave it my all. I didn't feel like puking at the end. I think I could have pushed harder. It's still an accomplishment. I got 1 st place in the Athena Division!

I need to remember the days when I wanted to brake 40 minutes in 5K :)

Now I'm going to prepare a Chinese feast. I found a recipe for General Tsoa's Chicken (from the NYT). I'm gonna make hot and sour soup, also. Then coconut ice cream with lychees for dessert. April and Sean are gonna bring a side dish. Dinner is gonna be YUMMY!!!! Calories dont' count on race days, especially race days when you PR and place ( even it was in the Athena catagory).
