Today was my last day with my horrible second graders. I'm pretty sure I got cussed out in Spanish today. To celebrate I skipped my support group meeting and made dinner!

Phyllo pizza with goat cheese, prosciutto, caramelized onions,roasted holland peppers, yellow tomatoes, fresh herbs, and olive oil. Paired with some wine and a salad. Then followed by ice cream with fresh pineapple and black berries.



I made seared tuna with a panko coconut crust and spicy soba noodles last night. I didn't take a picture. We ate it all, too.

I swam this morning. 3300 yards. My goal is 9000 a week. One more swim on Sunday and I will have that easy!

I agree with Mel...looks very yummy! Chad and I had spicy soba noodles last night, too. I would love to know your recipe.

it was your wine mel! We had one glass each and we'll finish it up tonight.

As for the spicy soba noodles, I don't really have a recipe.
I basically use:
1/4 cup rice wine
1/4 cup soy sauce
1 cup fresh pineapple
1tbs minced ginger
1tbs minced garlic
2 dried serrano chllis ( from the garden last year)
a couple squirts of the red sauce with the rooster on it, that all asian resturants seem to have. (We call if rooster sauce.)

I simmered all that for about 30 minutes while I was cooiking everything else.
